Garlic Quinoa and Lentil Stir-fry: Bamboo Bowl Foodie

This was an epic brunch for more reasons than that it was delicious!

I woke up today with a hankering for garlic fried rice. As it was a public holiday, I had all the time in the world to make some. However, I had no rice!

I had some Quinoa that I cooked last night and some canned lentils…I thought, “perhaps these would work!”

I pulled out other ingredients that I wanted to use and realised that I didn’t have any soy sauce, so thinking on my feet, I decided to mix some Vegemite with water to make a substitute.

Cooking this fried “rice” allowed me to experiment and put different ingredients together that totally worked.

Once I’ve re-tested this recipe, I’ll post it up- yes, Vegemite and all!

What are some unusual ingredients you have used to substitute other ingredients or used because you were curious as to give it will turn out?
